Christmas Cookies – Holiday Rum Balls
Each year, like so many other families, we bake Christmas cookies. Our selections shift a little each year, but usually include a few staples such as sugar cookie cutouts. One cookie we NEVER fail to include are these Holiday Rum Balls. Years ago, my mother clipped this recipe from the newspaper and we’ve been making it ever since. It doesn’t technically qualify as baking, because they never actually go in the oven. My family loves these cookies and I hope your family does too!
A few tips:
1. The easiest way to turn vanilla wafers into crumbs is with a food processor, but I have absolutely done the job with a zip-log bag and a rolling pin. Just try to make sure you get rid of all the large chunks.
2. The original recipe called for nuts (1/2 Cup), but we have never made ours with nuts.
3. For some reason, these cookies have a better taste and texture if they sit for a day or two before eating.
We rarely wait, but make enough so there are still cookies left when they reach prime eating. Also, they freeze well.
